May is National Strawberry Month, National Egg Month, and National Asparagus Month. We are so pleased that we have farmers who sell all of these products! Here are some recipes for both of these products:

Strawberry Spinach Salad with Candied Pecans

Serves: serves 4 to 6

Ingredients:

2 tbsp butter
1 cup pecan halves
2 tbsp brown sugar
6 oz baby spinach leaves
1½ cups sliced strawberries, stems removed
¼ cup crumbled goat cheese (or feta cheese if desired)
balsamic vinaigrette

Instructions:

p. Melt the butter in a small skillet over medium heat. Toss in the pecans and brown sugar, stirring to coat. Cook over medium heat until the sugar begins to caramelize (about 3 minutes). Spread out pecans on a wax paper lined baking sheet to cool.

In your salad bowl layer the spinach leaves, strawberries, goat cheese and pecans. Don’t pour dressing on salad until ready to serve. Enjoy!

SCOTCH EGGS

6 hard cooked eggs cooled and peeled
1 lb pork breakfast sausage
2 cups breadcrumbs (more if needed)
1/2 cup flour or cornstarch
3 eggs beaten

Heat oil in deep-fryer or deep skillet to 375 degrees F (190 degrees C).

Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, cool and peel, and dry.

Flatten the sausage and make a patty to surround each egg. Very lightly flour the egg. Flatten a sausage patty and wrap an egg, sealing it around the egg. Coat with beaten egg. Roll in bread crumbs, slightly pressing crumbs onto sausage to cover evenly.

Deep fry until golden brown, or pan fry while making sure each side is well cooked.

Eat out of hand or serve with a mustard sauce.

(You may either cook the eggs until hard cooked or slightly runny yolks. Totally up to you!)

Roasted Garlic Asparagus

INGREDIENTS

1/2 cup extra-virgin olive oil
8 cloves fresh garlic, minced
1 teaspoon onion powder
2 tablespoons fresh finely chopped parsley
2 pounds thin asparagus, ends trimmed
Fleur de sel or coarse sea salt
Freshly ground black pepper

PREPARATION

Preheat oven to 400°F.

Line a large jelly-roll pan with parchment paper. Set aside.

In a small pot, heat the oil, garlic, onion powder, and parsley on medium-low heat. Cook for 3 minutes, until the garlic mixture is fragrant but not browned.

Spread the asparagus in a single layer on the prepared pan. Lightly sprinkle with coarse sea salt and freshly ground pepper. Drizzle on the garlic-oil mixture.

Roast for 8-10 minutes, until the asparagus are bright green; do not overcook.

Transfer to a platter and serve hot.

The market had a very successful opening week! Thank you to everyone who shopped and supported the farmers, crafters and bakers.

It is so great to have the variety of locally grown produce at our market. This week our farmers had strawberries, spinach, kale, chard, mustard greens, bamboo, asparagus, romaine, leaf lettuce, onions, radishes, turnips, beets, farm fresh eggs, pastured meats, and a variety of cows milk cheese. We have new crafters, jams and jellies, and lots of fresh baked breads, cookies, cake, scones and more.

Stop by the Market Welcome Table Tuesday to pick up recipes for Scotch Eggs and a Spinach salad.

We are so excited about opening day! This year the farmers and vendors will be set up in the grass, along the sidewalk, facing University Street. The market will open at 3 p.m. and remain open until 7 p.m. and will offer fresh produce, farm fresh eggs, pastured pork, poultry and beef, herbs, baked goods, hand crafted items, vegetable plants, and maybe some cut flowers.

Our farmers have been working hard during the late winter and early spring to be able to bring food to your table!

The Online Market will continue to operate with thepick up location moving to the Market Table in the park on Saturdays. You can pre-order your favorite items and shop the market for other selections when you pick up your order.

White River Creamery cheese will be available via online ordering only. You may stop at the Market Table on Tuesdays to place an order or place your cheese order online at your convenience – Sunday through Wednesday at 5 p.m. – and pick up those orders on Saturday at the Market Table.

Come down and enjoy LIVE MUSIC by local band Lore! They will be playing from 5 to 7 p.m. on opening day!

Stop by the Market Table and pick up the Spring edition of Edibles Ozarkansas and Food and Farm.

Don’t forget there will be a Mobile SNAP (Supplemental Nutrition Assistance Program) Van at the market on Opening Day to assist customers who may qualify for SNAP benefits. The market accepts SNAP/EBT benefits at the Market Table. Stop by if you have questions or would like to visit the staff in the Mobile SNAP Unit to see if you qualify for benefits.

Reserved Parking spaces for April 25th pick up


Hey everyone! Don’t be concerned about parking on Saturday – we have made arrangements to reserve several parking spaces in the lot where the office/conference room is located. They will be clearly marked for market customers.

Place an order with confidence. You will have no problems with parking.

We have lots of farm fresh eggs available and there is additional meat inventory being added daily.

Online Market is Open!


The online market will continue to operate year round. Saturday, April 25th is the last day for pick up to be located at the Main Street Conference Room. Beginning Saturday, May 2nd, all online orders will be available for pick up at the outdoor market.

White River Creamery cheese will be available through online ordering only. Make sure you check out the great variety of cheeses available online each week and place an order by Wednesday at 5 p.m. to ensure it will be at the market for pick up on Saturdays.

Opossum Hollow Produce will not be listing a produce and herb inventory this week so they can have plenty to bring to Opening Day on April 28th. They will have their farm fresh eggs listed online.

One week from Tuesday the outdoor market season begins!

Tuesday, April 28th we open in the park and will be set up from 3 p.m. to 7 p.m. These are the vendors we are expecting on Tuesdays:

We will have live music provided by the local band Lore! They will be playing from 5 to 7 p.m. Bring a chair and enjoy a beautiful spring evening at the park.

With our new hours on Tuesdays, now you can stop by after work or come downtown on Tuesday evenings to eat at one of the great local restaurants and pick up your favorite items at the market!

Next Saturday’s newsletter will highlight our Saturday vendors. If you don’t see someone on Tuesday you can expect they will be here on Saturday, with the exception of Green Pastures Products and Create 4 Good, who are both taking a break from market this season.

Lemonade Day – Saturday, May 2nd – there will be lemonade stands located downtown near the market and in other locations around town. For more information visit http://nwa.lemonadeday.org/ and make plans to support our local young entrepreneurs!

Kids Day – Saturday, May 9th – Benton Co Master Gardeners and Bridges to Wellness will be providing a craft, education, and acitivites to get the kids moving! And as always, there will be story time and a bounce house.

Saturday, May 16th, the Siloam Springs Extension Homemakers will be at the market. More information to come!

Five-Herb Frittata with Prosciutto and Parmesan

INGREDIENTS
4 large eggs
2 teaspoons water
1/2 teaspoon kosher salt
1 tablespoon finely chopped mint
1 tablespoon finely chopped parsley
1 tablespoon finely chopped chives
1 teaspoon finely chopped oregano
1 teaspoon finely chopped thyme
1 1/2 tablespoons unsalted butter
1/2 ounce prosciutto, torn (2 slices)
Coarsely ground black pepper
Parmigiano-Reggiano cheese shavings, for serving

In a medium bowl, beat the eggs with the water and salt. Beat in the mint, parsley, chives, oregano and thyme. In a 10-inch nonstick skillet, melt the butter. Add the eggs and cook over moderately low heat, without stirring, until just beginning to set at the edge, about 3 minutes. Using a spatula, lift the edge and tilt the pan so the egg mixture can seep underneath. Continue to cook, lifting the frittata and tilting the pan occasionally, until the frittata is just set and creamy on top, 3 to 5 minutes longer. Scatter the prosciutto over the frittata and slide it onto a plate. Garnish with coarsely ground pepper and shaved Parmigiano and serve right away.

White River Creamery is back! Check out the great selection of cheese available under the Dairy section. Here is some information about the family and their farm:

White River Creamery is a family run farmstead dairy and creamery. They have 90 Nigerian Dwarf goats on 12 acres of pasture in Elkins, Arkansas. The cow milk comes from a local dairy that is certified hormone free and antibiotic free. The dairy is located just 20 minutes outside of Fayetteville across from the White River.

Scott trained at Vermont Institute of Artisan Cheese where he completed basic and advanced cheese making courses. Tessa and their three daughters, Amber, Caily, and Emily, did an internship in Vermont and learned goat health and husbandry. They started building the herd and dairy in 2011 and passed the final inspection in May of 2013.

Nigerian Dwarfs have the highest butterfat of any dairy goat, which gives a rich and creamy milk and amazing cheese. Their herd is managed organically and their health and quality of milk is the family’s top priority. They milk the goats twice a day. The bucks are kept in a private pen from the does, which keeps the milk from having any “goaty” flavor. They have a closed herd of registered Nigerians with many ADGA Champions, recognized Superior Genetics, and Top Ten milk producers. They are a permitted dairy and creamery:

Be sure to check out all the new products listed online. Skopp Bakery has new jams listed under processed foods and jams, as well as some herbs and a few baked goods listed. Opossum Hollow has cage free/non-gmo eggs as well as an ever growing list of greens and herbs. R Family Farm has re-stocked their beef and pork products. J.D. Hudson Farms has a few new products as well. East Side Acres has eggs for sale. The Bread Basket and Susi’s Kitchen have lots of tasty baked goods. The Bread Basket also carries local, raw honey from Sipes Busy Bee. Abbie Kim makes some beautiful dolls and other gift items. Roca Baby Candy has some awesome almond roca! We still have some of those nice market bags with the Buy Fresh Buy Local logo for sale as well.

Don’t forget to stock up on Create 4 Good products as Melissa is taking a break from the market once we open up in the park. You will still be able to contact her directly to order if you need to though.

All of our winter Double Dollar funds have been distributed. We are hoping to receive more mid-summer.

The outdoor market will open on April 28th, and will be an evening market from 3 p.m. to 7 p.m. We are excited to be able to offer the Tuesday evening and Saturday morning 8 a.m. to 1 p.m. market to our community this year!

We have a variety of events and activities planned for this season, to include:

Siloam Springs Extension Homemaker’s Club will be with us every first Saturday.

Kids Day is every second Saturday and the Benton County Master Gardeners will be with us offering children’s activities and adult education.

There will be a local 4-H group with us on the 3rd or 4th Saturday of each month offering activities and information about 4-H.

That is just a peek at few things coming to the market this season. More information will be shared in the weeks leading up to Opening Day!
