Hope everyone is well and enjoyed a wonderful Thanksgiving with family and friends. We spent the day with my family, had a beautiful meal, did lots of visiting and catching up (I took an unexpected nap in the recliner) and enjoyed the nice weather. Praying the cold front coming in doesn’t stay around too long.

Produce is back online this week. Some of our vendors will be offering specials this week – kind of like a “Black Friday” or “Cyber Monday” sale but it will last Sunday through Wednesday.

Skopp Bakery will be giving away a bag of home made caramels when you purchase at least $10 in items from them. Jams and Jellies make great gifts and are a nice appetizer to take to a party. Just put your favorite jam over cream cheese and serve with crackers or hearty bread. Rikki also makes great scones, granola, loaf breads, artisan breads, and more.

Susi’s Kitchen is offering two mini loaves for $8.00 – gluten free, banana, cranberry or pumpkin; and 1 dozen cookies for $7.00 – any that she has listed online.

I expect there will be additional vendors participating so please watch for additional announcements as I hear from them.

We are thankful for all of our market patrons and wish you many blessings this holiday season!

The market will be open for business this week, through Wednesday at 5 p.m. and you will be able to pick up your orders on Saturday between 9-11 a.m. Opossum Hollow Produce is taking vacation time this week due to the holiday so there will be no produce available.

However, you can still get your eggs, meats, jams & jellies, baked goods and crafts. After a couple days of turkey leftovers you know you’re going to want something different. ;)

Happy Thanksgiving!

Availability of Extra Produce

Just a note to let our online market shoppers know that Opossum Hollow Produce will not have any extra produce available at tomorrow’s pick up. Nine degree temps slow things down pretty fast and we need a few more warm days to help the greens recover from that cold spell.

Thank you for continuing to support the market.

Hard to believe we may have our first snow on November 16th. I miss fall and really wish it would return, but it looks like we may have a very cold, wet early winter according to the persimmons and the meteorologists.

Roca Baby Candy has opened up online and added two types of Almond Roca. This would make a great addition to your holiday dessert table. I’ve sampled her candy and it is delicious!

Opossum Hollow Produce has updated inventory and also hopes to have some extras this weekend. So, if you miss getting an order in online there is the hope of purchasing at the pick up location on Saturday.

J.D. Hudson Farms is back online as well.

The market now offers over 200 products online – locally grown or locally made! We are truly a blessed community!

Produce update......

Tom, owner of Opossum Hollow Produce, has been working hard all week long to keep the high tunnel warm and the produce alive. Cold snaps like the one we are experiencing this week causes the plants to be stressed. Uncovering them and exposing them to the cold could harm them so there will be no produce available this week at market.

Tom says, “We’ll be back next week with Spinach, Kale, Chard and Lettuce. Its too early to tell if we’ll be posting an inventory on the https://siloamsprings.locallygrown.net/ on-line market site, but we’ll keep y’all posted. Thanks for sticking with us. This is a tricky time of year complicated by even trickier weather”.

We appreciate Tom and all his hard work. We thank our customers for understanding this situation.

See you tomorrow morning!

Market Update

Good morning! Hope you’re keeping warm on this chilly morning. 70 degree temps one day and 29 the next. Kinda crazy even though we knew well in advance it was going to happen.

After a couple weeks break from Farmers Markets, J.D. Hudson Farms is back up and running and his products are available through the online market. I’m re-sending the product listing with this newsletter.

There is still plenty of time to place an order for pick up on Saturday morning.

Have a great week!

With the impending extreme cold weather we are going to be experiencing this week, Tom, of Opossum Hollow Produce, feels it is best not to list any inventory on the market and market management supports that decision. Even though the produce is growing in a high tunnel and will also be under row covers, it is difficult to determine what the harvest will be. However, he will be present at the online market pick up Saturday with whatever he has been able to harvest and you will have the option to purchase produce when you pick up your order. I may be able to send out an update Friday with a list of what he was able to harvest. We apologize for any inconvenience this may cause in your planning for the week. Thank you in advance for understanding.

If you have some kale from Opossum Hollow Produce here is a recipe for some nourishing soup that will help keep you warm this week:

INGREDIENTS

4 strips bacon, 4 ounces, cut crosswise into 1/2-inch pieces

1 medium onion, finely chopped

1/2 pound kale, thick stems removed, leaves finely chopped (about 8 cups)

4 cups Acorn Squash Puree, or 2 packages (12 ounces each) frozen winter squash puree, thawed
Coarse salt and ground pepper

DIRECTIONS

Cook bacon in a large saucepan over medium heat, stirring occasionally, until crisp, 4 to 5 minutes. Using a slotted spoon, transfer bacon to a paper-towel-lined plate; set aside.
Add onion to fat in pan, and cook until softened, 4 to 5 minutes. Add kale; cook until soft, 3 to 4 minutes.
Add squash puree and 3 cups water (or more if necessary to achieve desired consistency); bring just to a boil. Season generously with salt and pepper. Serve, garnished with reserved bacon.

Keep warm this week and we’ll see you Saturday!
