Time for Soups and Stews! Online Market is Open!

Since we continue to experience colder than we’re use to temperatures this winter, it’s time to warm up with homemade soups and stews made from scratch with pastured and grass fed meats and bone broth. Not only will this warm you up but it will fill your body with good, healthy nutrients that will boost your immune system and help fight off colds and flu.

Grandma’s Chicken Noodle Soup

Prep Time: 15 minutes

Cook Time: 1 hour, 10 minutes

Total Time: 1 hour, 25 minutes

Ingredients

3 Tablespoons pastured butter
1 Cup onion, diced
1/2 Cup garlic, minced
1/2 Inch ginger root grated or finely sliced
1 Cup carrots, diced
2 Cups potatoes, diced
1/2 Cup celery, diced
4 Cooked chicken breasts, diced or shredded
8 Cups homemade chicken broth
1 Handful fresh parsley – chopped
1 Teaspoon sage
1 Teaspoon rosemary
1 Teaspoon thyme
1 Tablespoon unrefined salt
2 Cups healthy noodles of choice – we usually use einkorn noodles.

Instructions

Saute all vegetables in butter in large stock pot until soft (6-7 minutes).
Add all ingredients to pot except noodles and chicken.
Simmer for 1 hour over low heat.
While the soup starts simmering, boil your chicken breasts. Shred or dice when cooked and add to pot.
Add noodles and cook until done (5-10 minutes).

Notes

You can tweak this recipe to your liking and add other veggies and herbs. You can save soup in freezer as well.

Produce progress report – things are growing at a very slow rate due to cold temperatures. Opossum Hollow and Arkansabi Farms both have greens planted and growing. Warmer temps and more sunlight will help get more veggies ready for the market. We really appreciate their efforts to grow year round for our market.

Just a reminder to stock up on chicken so you have plenty in the freezer until R Family begins raising their spring birds.

R Family Farm chicken is selling quickly. This is the last of the chicken until Spring so be sure to stock up while you can. Bone broth is great to have year round, but especially good during the winter with all the colds and flu going around.

You can purchase honey, farm fresh eggs,Lefse, beautifully knitted/crocheted kitchen items, and all natural products for personal and home use.

What is Lefse you ask? Lefse is a traditional soft Norwegian flatbread. It is made with potatoes, flour, butter, and milk or cream. It is similar to a tortilla, maybe a bit larger. You can use it as a wrap for sandwiches, breakfast burritos, or slathered with butter and honey.

Enjoy the warmer temps this week as it looks like we will be experiencing cold temps again by Friday.

Happy New Year! Market is Open!


The New Year came in with a cold front and it was 4 degrees at my house this morning. Our neighbor’s water froze. We are thankful ours did not. Keep the water dripping this week.

R Family Farm stocked up the chicken this week so you should stock up too as this is the last of it until spring.

Unfortunately produce isn’t going to grow well with these cold temps so it may be a few weeks before it’s back online.

This week we welcome Kirsten Pearson to our online market with her amazing Lefse! Kirsten shared a booth at the outdoor market with Claire from Redhead Bread. You can find the Lefse under the Baked Goods then Ethnic/Specialties. Lefse is great for wraps, breakfast burritos, and warmed with butter and salt or honey.

R Family Farm has their last batch of chickens at the processor now and should be picking them up next week. This will be the last of the chicken cuts available until spring. They should be listed online by the week of Christmas.

Here is an idea for a great appetizer tray using sausages from the market. R Family Farm has German Sausage, Beef and Pork Bratwurst, Jalapeno Cheddar Brats, and Andouille Sausage. Prepare your favorites, slice them and arrange on a wood board or platter along with mustard dipping sauce, your favorite sauerkraut, and maybe some cheeses, a baguette, or fresh baked pretzels.

Mustard recipes:

Horseradish mustard:
1/3 cup Dijon mustard
2 teaspoons grated horseradish in vinegar

Apricot chili mustard:
1/4 cup apricot preserves
1 tablespoon Dijon mustard
1/2 teaspoon hot chili flakes

Wasabi-whole grain mustard:
1/3 cup whole grain mustard
1/2 teaspoon wasabi paste

We are entering the season where the weather may begin affecting produce. As of Friday, everything was still doing well even after a mornings of below freezing temps. We are very thankful for all the hard work our farmers put into extended season growing. It’s a gamble for them that produces a longer season of fresh, locally grown produce for us.
